Keto Bacon and Egg Muffins

Ingredients:

  • 6 large eggs
  • 6 slices of bacon
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced green onions
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and chop into small pieces.
  3. In a large mixing bowl, whisk together the eggs, salt, and black pepper until well combined.
  4. Stir in the shredded cheddar cheese, chopped bacon, and diced green onions.
  5. Grease a muffin tin with cooking spray or butter.
  6. Pour the egg mixture evenly into each muffin cup, filling each about 3/4 full.
  7. Bake in the preheated oven for 18-20 minutes, or until the egg muffins are set and golden brown.
  8. Remove from the oven and let cool for a few minutes before removing the muffins from the tin.
  9. Serve warm and enjoy!
